内容記述 | ACE inhibitory activity in hydrolyzate of food proteins treated by some proteases was tested. The protein from soybean, when it was hydrolyzed by proteases, had larger ACE inhibitory activity, especially at neutral pH. At lower and higher pH all hydrolyzate did not show high ACE inhibitory activity contrary to our expectations. Without treatment of protease, on the contrary, soybean protein had lower ACE inhibitory activity than those of wheat and corn. | |||||
