The results obtained for the chemical composition of the raw milk were given as follows: specific gravity 1.0313; acidity 0.148%; pH 6.71; fat 3.33%; protein 2.89%; lactose 4.38%; crude ash 0.66% and solid-not-fat (SNF) 8.15%. There was significant seasonal variation in each milk component. The yearly mean of SNF content in the raw milk was recognized to be below the mean of SNF in the whole of Japan, and the monthly mean of SNF content showed a tendency to be lower in the period from April to September. Bacterial count in each milk sample was generally as small as below 106/ml through a year.
