The hydrolysis of starch, cellulose, chitin, and chitosan, catalyzed by glucoamylase, cellobiohydrolase, chitinase, and chitosanase, respectively, has been successfully monitored by direct and continuous measurements of their products in thick suspensions without any influence of turbidity.
