で,グルタミン酸(23.6%),アルギニン(13.2%),アスパラギン酸(11.5%)が多く,うま味成分が豊富である。脂肪酸組成ではオレイン酸(47.9%)とリノール酸(33.9%)の割合が大きく,クルミに比べ多価不飽和脂肪酸の存在量が少なかった。ビタミンEとして抗酸化力の高いγ-,δ-トコフェロールをそれぞれ0.209mg/g,0.249mg/g
