B2・V. C・Ca・Mg・Znの予定給与栄養量は, 推定平均必要量 (EAR) 未満となり不足の可能性が高いと推察された確率法による栄養素不足者の割合は, レチノール当量 38.9%, V.B1 36.1%, V.B2 22.2%, V.C 92.4%, Ca 99.9%, Mg 81.3%, Zn 95.1% と推定された「システムモデル」を適用することで, 系統的に詳細な食事評価および個人・集団の栄養素摂取量の評価を行うことが可能となり, 施設全体の栄養管理の品質向上が期待できると示唆された. The aim of this study is to develop a system model for dietary management in elderly care facllities based on Dietary Reference Intakes for Japanese, 2010 (DRIs-2010). The framework of the system model was constructed according to the basic theory of application in DRIs-2010, and then the system model was developed using the data in an elderly care facillty. And the probability of nutritional deficiency was calculated from the individual habitual intake of nutrients, in addition, the proportion of the nutrient deficiency in the group was also calculated from the probabillty method and the EAR cut-point method. These results revealed that supplied nutrition levels of retinol equivalent, V.B1, V.B2, V.C, Ca, Mg and Zn were less than EAR. Thus there may be the deficiency of these nutrlents. The prevalence of deficiency of these nutrients were 38.9%, 36.1%, 22.2%, 92.4%, 99.9%, 81.3% and 95.1%, respectively. It will be possible to evaluate systematic and precise nutritional states of individual and group using the system model based on DRIs-2010.
